Coeliac disease is an autoimmune disease that causes people to react to the protein, or gluten, found in wheat, barley and rye. If a coeliac eats gluten the lining of the small intestine becomes damaged, reducing the person's ability to absorb nutrients from food. Gluten is found in bread, biscuits, cakes, pasta, beer, pizza and many other processed foods.

Even the smallest grain of gluten can cause harm so coeliacs have to be careful when buying and preparing food. Care must also be taken when purchasing naturally gluten free grains such as rice flour and quinoa as there is a risk of cross contamination in factories, unless otherwise stated on the label.
